Thursday to Saturday the counter runs a set omakase from the same grill and the same fish case as the room. It isn't a longer version of the menu. It's what the cook wants to make that week, cooked a foot in front of you, in the order it wants to be eaten. No choices, and no substitutions except for allergies, which we'll ask about when you book.

The list is six bottles long because we would rather pour six we can tell you about than forty we can't. It changes a few times a year, usually when a brewer we like has something new. Highballs are built to a ratio, poured over one clear cube, and taste better than they have any right to.

The building ran letterpress and offset from 1952 until 2016. We kept the concrete floor, the clerestory windows, the type cabinets along the back wall, and the smell of ink in the stairwell, which we have given up trying to remove. Forty seats: a line of two-tops down the brick, one long communal table cut from the old paper-stock shelving, and the counter under the pendants at the back.
It's loud in a good way after eight. If you want quiet, come at half five, or sit at the counter on a Tuesday, when it's just a bar.

The old print shop with the red noren. Bike racks out front, and the Ledger Street lot is free after six.
The room doesn't take them. Walk in. If there's a wait we'll take your name and pour you something at the standing shelf by the door. Waits run twenty to forty minutes on Fridays and Saturdays after seven.
